    Salmon Croquettes (Salmon Patties) Empty Salmon Croquettes (Salmon Patties)

    This is one of my mother's comfort foods, I remember eating as a child.  Even though I am not an avid fish eater, as I should be.  This recipe is easy and delicious.  Enjoy!

    1 can of Red or Pink Salmon drained, de-boned and crumbled. (I remove the skin and the bones, as that is my preference. It is not necessary to do either, as the ones are soft.)
    1/2 cup onion chopped finely
    1 egg
    Approx. 1/2 cup Self-Rising Corn Meal
    Salt and Pepper
    1 tsp fresh or dried dill (optional)
    1/8 to 1/4 cup of water.

    About 1/4 cup crisco vegetable shortening (for frying)

    Mix all the ingredients with the exception of oil. Mixture will be thick and can be formed into patties. Heat skillet with enough oil to coat the bottom of the pan.  You can add more oil if needed, during the cooking process.  Drop Salmon mixture by TBSP's into pan, and flatten slightly with the back of the spoon.  Fry until light golden brown, and flip.  This doesn't take long, so watch carefully.  Drain on paper towels.  

    You can serve this with white vinegar, apple cider vinegar, or lemon juice.  My mother always served hers with a little vinegar on the side.  The dill will give the Salmon Patties, a nice bright flavor.

    For more patties, simply double the recipe.

    This is traditionally served with Hush Puppies: About 1  cup each of  of cornmeal and self rising flour, 1/2 cup chopped onion, 1 egg and buttermilk,mixed to the consistency of corn bread, and dropped by TBSP's into a deep pan of oil.
