Susan's Macaroni Salad
Susan's Macaroni Salad
I love using whatever is available in my Summer Garden, and having plenty of salads around, during the hot months. This salad is so refreshing. Enjoy!
About 1 lb of macaroni noodles, or any medium size noodles you prefer. Cook noodles according to package directions. Drain and allow to cool.
While noodles are cooling, put the following in in a large bowl.
1 large cucumber cut into about 1/2 inch pieces
1/2 onion chopped finely
1 large bell pepper, seeded, and chopped
1 tomato chopped into 1/2 inch pieces
1/2 cup almonds ( I use garlic almonds)
1/2 cup sunflower seed
1/2 cup craisins (dried Cranberries)
About 1 to 1 1/2 cups of ranch dressing
1/4 cup olive oil
3 Tablespoons mustard
Mix in noodles, and salt and pepper to taste. Top with a sprinkle of paprika. Refrigerate, and serve.
